There are thousands of Wordpress Plugins out there and here is a list of my favourites, hopefully they could be useful to others too; they aren't in any order of preference just alphabetical. If you have any additional plugins you really like and think I have missed, it would be great to receive your comments.

Advanced Adsense A simple plugin to help make your Google AdSense Ads display better, more relevant ads.
Akismet Akismet checks your comments against the Akismet web service to see if they look like spam or not. You need a WordPress.com API key to use it. You can review the spam it catches under "Comments."

Comment Notifier Let blog visitors to subscribe to comment threads, receiving an email in their mailbox on new comments
